Freddy started working with his palate at 13 years old, cooking at his family restaurant. He attended the Scottsdale Culinary Institute and worked in several Phoenix area restaurants while attending school.
After completing culinary school, Freddy moved to various locations to further his culinary career including Las Vegas, Hawaii, and Los Angeles. He spent nine months in Italy attending the Italian Culinary Institute in Costigliole D’Asti, Italy and worked as a Pastry Chef in one of Northern Italy’s finest pastry shops.
After returning from Italy, Freddy developed and taught a Vocational Education program for Restaurant Occupations at the high school he graduated from. A few years after returning to the U.S., his love of wine that was springboarded during his time in Italy became overwhelming and he decided to change careers and attended the Enology and Viticulture program in Walla Walla.
Freddy has been at Cave B Estate winery since graduating from the V&E program in 2006, working as assistant winemaker for two vintages, and taking over winemaking during the 2008 vintage. Working closely with the Cave B viticulture team, Freddy has grown the portfolio of wine offerings as well as improving the overall quality of wines at Cave B.
In recent years, the urge to give back has led Freddy to get involved with Washington Wine Growers and become a board member. As sitting Vice Chair of the Washington Wine Growers board, his hope is to help in any way he can to continue to drive forward an industry that has given him so much.
